Our organic einkorn berries can be milled into flour in your kitchen, making a 100% whole, heritage wheat flour. Einkorn flour is perfect for any kind of baking including yeast-based and sourdough breads. When not mixed with other flours, this einkorn flour will have a different flavour, almost like cinnamon. Einkorn wheat was one of the first wheat species grown for food, dating back 5,000 – 12,000 years ago. Ancient grains tend to be higher in mineral content and protein than many common wheat varieties. Einkorn is not gluten-free but does tend to have lower gluten than modern wheat.
